Galbi-sal vs Kkotsal vs Galbi-bonsal — what's the difference?

In Korean BBQ, the word *galbi* (갈비) often gets used as a catch-all for short rib cuts, but a single side of hanwoo yields several distinct sections. Galbi-sal is the most popular boneless cut, sliced along the grain so it falls apart at the bite. Kkotsal (literally ‘flower flesh’) has marbling that blooms like petals — best grilled briefly to keep its natural sweetness. Galbi-bonsal is the dense, deeply marbled core of the short rib — slow on the grill, intense in flavor.

Why real charcoal

Gas is efficient, but it can't lend aroma. Real charcoal (연탄숯불, *yontan sutbul*) gives short bursts of intense heat plus the smoky scent only burning charcoal can deliver. The same cut of galbi becomes a different piece of meat on a charcoal grill — which is why Doma Hongdae hand-cuts only one cow's worth of hanwoo each day, just to get every slice on the fire in peak condition.

Doma Combo A vs B — how to choose

  • Doma Combo A (galbi-sal + galbi-bonsal + kkotsal): a hanwoo-only flight for tasting the cuts side by side.
  • Doma Combo B (galbi-sal + Australian wagyu sirloin + kkotsal): hanwoo and wagyu in one plate, for comparing two beef traditions.

How to finish — the doenjang sool-bap bowl

The signature finisher at Doma sits at the end of the meal. Doenjang sool-bap is rice steeped into a deep doenjang broth; addictive doenjang stew is exactly what its name claims; and yukhoe naengmyeon drapes hand-cut beef tartare over cold buckwheat noodles. The choice of finish shapes the whole arc of the meal.
